Whole bunch fermentation and 2 weeks skin-contact. Aged in 500l old oak barrels.
The story behind the name is that Jurgen Gouws (the winemaker) was driving with his intern to the vineyard early Saturday morning to pick the grapes for the wine. They were both tired and Jurgen asked his intern to chat to him to keep him awake but he fell asleep almost immediately- hence sleeping Co-Pilot.
The wine is perfumed and floral, a real fruit basket on the nose. Citrus fruits and a fresh, grippy palate.
