I Have VA, Minimus Wines


60% Chenin Blanc, 20% Aligoté, 20% Chardonnay

Each grape was harvested individually and whole bunch pressed, before blending in tank. The wine developed a high level of volatile acidity during the fermentation but Chad Stock (winemaker) thought that the higher the volatility the wine got the more delicious and complex it got. 

After 10 months old oak ageing and before bottling, the wine was tested for VA and it came in at 1.1g/L which is exactly the legal limit for American white wine. 

Unusual and delicious, it's a wine that shows that faults aren't always what they seem and wines shouldn't necessarily be boxed into faulty/correct categories. Rather they should be tasted and enjoyed for what they are.
